Saw your show on 11/11/08 doing Dirty Potatoe Chips. Saw at the conclusion where you were climbing into the fryer with the manager (after it cooled off!!!) and cleaning the fryer of dead chips by scooping them up with your hands down in the channels. Question, why wouldn’t you use an Industrial vacuum cleaner to clean out all these dry scrapes at this point and simplify the task? just curious
